Preheat the oven at 210°C (thermostat 7).
Roll out 1 of the puff pasty sheet and make a few folk holes in the pastry
In a bowl, mix the almond powder, sugar, egg, butter and the almond extract.
Spread the mixture onto the 1st puff pastry sheet, leaving about 1/2 -1 cm of the edge
Place of the mixture the 2nd puff pastry and marry the edge of the 2 sheets of puff pastry with the help of a fork.
With the help of aknife you can create design on the top sheet or just make a simple pattern. Then glaze the pastry with the egg yolk to give it a nice colour :)
Pierce a few holes in the top pastry to ensure any air can escaped during the cooking period
Cook in the oven between 25-40 min (keep an eye on it)
